This weeks recipe is a great way to get your kids to eat some vegetables. Normally I have a hard time getting my kids to eat zucchini but they love this bread because it tastes like cinnamon.

Zucchini Bread
1 1/2 c flour
1 t cinnamon
1/2 t baking soda
1/2 t salt
1/4 t baking powder
1/4 t nutmeg
1 beaten egg
1 c sugar
1 c finely shredded, unpeeled zucchini
1/4 c cooking oil
Preheat oven to 350*. Grease bread pan (makes 1 regular loaf or 1 mini loaf pan). In medium bowl combine flour, cinnamon, baking soda, salt, baking powder and nutmeg. Set aside. In a separate bowl combine egg, sugar, zucchini and oil. Add zucchini mixture to flour mixture. Stir just until moistened. Spoon batter into prepared pan. Bake for 50-55 minutes. *If using a mini loaf pan you may want to reduce baking time.
